INGREDIENTS
9 chicken thighs (skinless, boneless)
Sea salt flakes
1 head of garlic
0.5 cups EVVO
2 lemons
1 Tbs smoked paprika
2Tsps dried oregano
1 tbs brown sugar
1.5 tsp ground cumin
1 yellow capsicum
1 red capsicum
1 punnet of truss vine ripened cherry tomatoes
4 rashes streaky bacon
1 bunch basil
METHOD
Heat oven to 220c
Mix all ingredients together except basil bunch in a large stainless steel bowl
Place mixture in a large baking dish, place streaky bacon rasher over the top
Bake for 25-30 minutes
Remove from oven, tear basil leaves over, stir and serve.
