Philip Johnson is one of Australia’s most respected chefs, celebrated for his refined, produce-led approach to contemporary bistro dining. In 1995, he opened e’cco bistro in Brisbane, and just two years later, it was named Best Australian Restaurant by the Remy Martin Cognac Australian Gourmet Traveller Awards — a landmark moment for both Johnson and Queensland’s culinary scene.
Over the years, Johnson has authored seven cookbooks and earned a reputation for consistency, creativity, and a deep respect for quality ingredients. His food philosophy is simple: let great produce speak for itself.
